1¾ cups all-purpose flour
⅓ cup sugar
2 teaspoons baking powder
¼ teaspoon salt
1 beaten egg
¾ cup milk
¾ cup cooking oil
¾ fresh or frozen blueberries
1 teaspoon finely shredded lemon peel if desired

Directions:
Directions:
Heat oven to 400º.
In a large mixing bowl combine flour, sugar, baking powder and salt.
Make a well in the center.
In a small bowl combine egg, milk, and oil together.
Add liquid all at once to flour mixture.
Stir just till moistened (batter should be lumpy).
Gently fold in the blueberries and lemon peel.

Lightly grease muffin cups or line with paper muffin liners.
Fill ⅔ full.
Bake in a 400º oven for about 20 minutes or till golden.
Remove from pans, serve warm.

Makes 10-12 muffins
