32 chocolate wafer cookies (about 8 oz) can substitute GF cookies
2 Tablesppoons sugar
coarse salt
6 Tablespoons (3/4 of stick) UNSALTED butter, melted
12 oz semisweet chocolate chips (I prefer Trader Joes)
1 1/4 cups heavy cream
1 1/2 cups fresh raspberries (6 oz)

You can also substitute graham crackers for chocolate wafers.

Preheat oven to 350. In a food processor, combine cookies, sugar and 1/2 tsp salt. Process until very fine crumbs form. If using GF sandwich cookies do not use sugar as the filling has enough sugar and omit salt. Add melted butter and pulse until mixture comes together. Press crumbs firmly into a 9" fluted tart pan with removable bottom. You can use the bottom of a 1 cup measuring cup to press crust into tart pan evenly. Place on a baking sheet and bake until crust is dry and set, approximately 15-20 minutes. Let cool. GF cookie crust can have a shorter cooking time. In a large bowl, combine chocolate and pinch of salt. In a small saucepan, bring cream to bare simmer over med high heat. Immediately pour cream over chocolate and let stand 1 minute. Stir gently until chocolate melts and mixture is completely smooth. Pour chocolate into COOLED tart shell and refrigerate until set 30 minutes or more. To serve, remove tart from pan and scatter raspberries on top.
