1 tsp canola oil
1 medium onion, finely chopped
3 cloves garlic, minced
1 (4-ounce) can chopped green chiles
1 lb lean ground beef, turkey, or chicken
Salt and freshly ground pepper
1 C canned puréed tomatoes
3/4 C barbecue sauce
1/2 C ketchup
1 T mustard
1 to 2 T brown sugar
1/2 tsp cayenne powder
3 carrots
2 to 3 jalapenos
1/4 small red onion

1/4 to 1/2 C sour cream/greek yogurt

Directions:
Directions:
1) In a large sauté pan or cast-iron pan over medium-high heat, warm canola oil. Add the onion and sauté a few minutes until translucent, stirring constantly. Add garlic and green chiles, stirring to mix with the onion. Increase the heat to high and add ground meat, salt and pepper. Break up crumbled meat, and stir occasionally to make sure all the meat is cooked, approximately 3 to 5 minutes.
2) Lower the heat to medium-low, add canned tomatoes, barbecue sauce, ketchup, mustard, brown sugar and cayenne powder. Stir to combine sauce with the meat, and let simmer until the sauce has reduced and thickened, about 10 to 12 minutes.
3) Using a box grater set over a medium bowl, grate carrots, jalapeños and onion. Add salt to taste, and combine with enough sour cream to hold the slaw together.
4) To Serve: Heap sloppy-joe mixture on top of toasted hamburger bun bottoms. Garnish sloppy joes with slaw, add the bun top, and serve with a spoon and a bunch of napkins.
