5 lbs. tomatoes, cored and chopped roughly
1 ¼ cups finely chopped onion
1 clove garlic
1 T. oregano
1 T. basil
1 bay leaf
1 T. salt
1 t. black pepper
1 T. sugar
1 t. hot pepper flakes
1 t. Cajun seasoning

Bring tomatoes to a boil over high heat

Using a potato masher, smash the tomatoes until chunky

Stir in:
1 clove garlic
1 T. oregano
1 T. basil
1 bay leaf
1 T. salt
1 t. black pepper
1 T. sugar
1 t. hot pepper flakes
1 t. Cajun seasoning

Reduce heat to medium-low and simmer for 2 hours until reduced by ½
