4 cups flour
2 T baking powder
1 t salt
⅔ cup butter or margaring
1 cup sugar
2 egg yolks
2 cups milk
2 egg whtes, beaten until stiff but not dry

Directions:
Directions:
1. Combine flour, baking powder and salt.

2. Beat shortening until fluffy.

3. Add sugar and egg yolks and beat again until fluffy.

4. Stir dry ingredients into shortening mixture alternately with milk, stirring just to moisten.

5. Gently stir in egg whites.

6. Divide batter among well-greased muffin pans.

7. Bake at 400º for 20 minutes.

In 1983, we were given the recipe for Higbee's Muffins, then told not to publish it because the store was contemplating a cookbook. Since we are never likely to see that cookbook, here is the original recipefor those cakey, crumbly muffins.
