1# ground beef
½ c. chopped onion
2 c. frozen carrots/peas or mixed veg.
½ cp, beef broth
Mashed potatoes (enough for 4 servings)
Paprika

Directions:
Preheat oven to 375º.
Cook beef, stirring to break up meat, until no longer pink.
Add onion, cook until onion is softened.
Add veggies; continue to cook until veggies are tender, about 5 min.
Add broth, bring mixture to boil.
Lower heat, simmer until most of liquid is absorbed, about 10 min.
Transfer mixture to casserole dish. Top with mashed potatoes around edge of casserole.
Sprinkle with paprika.
Bake until heated through, 15 – 20 min.
