1 cup all-purpose flour
1/4 cup powdered sugar
1/3 cup chopped pecans
7 tablespoons butter
1 (8oz) package softened cream cheese
2/3 cup powdered sugar
3/4 cup Cool Whip
1 (29oz) can drained sweet potatoes*
1/4 cup sugar
1/4 teaspoon cinnamon
More Cool Whip and chopped pecans for topping

Preheat oven to 350°. Mix together flour, 1/4 cup powdered sugar, 1/3 cup pecans and butter, and press all that into the bottom of a 13x9x2” baking pan and bake it for 20 minutes then set it aside and let it cool. Then mix together the cream cheese and 2/3 cup powdered sugar until its all creamy. Fold in the Cool Whip. Spread the cream cheese mixture over the cooled crust. In another bowl, mix together the sweet potatoes, sugar and cinnamon and spread that over the cream cheese stuff. Top with Cool Whip, sprinkle some pecans over that, and refrigerate. Yam-Yum.
*Note: if you prefer to use fresh sweet potatoes, get 3 large, deep orange ones and cut them in half crosswise; boil them in their skins for 35 to 37 minutes or until they are very tender. Then cool and slip them out of their skins. Mash with a potato masher to equal 3 1/2 cups as each 29-ounce can yields 2 cups mashed.
