Preheat the oven to 250° (not a typo, it is a low oven) and put foil on a cookie sheet (you’ll be glad you did) and the bacon into thirds. Put a piece of raw bacon on each cracker and put the crackers on the foil. Then just dump a bunch of Parmesan over them and bake (at 250°) for 2 hours. This part is important: Take them out of the oven and leave them alone sitting on the cookie sheet and cool completely. Don’t touch them until they do. This cooling-off period allows for maximum re-absorption of any grease that may have inadvertently escaped during baking. If you leave them alone until they are stone cold, they will be crispy and wonderful. Don’t refrigerate them; put them in Tupperware, assuming you don’t eat every single one of them on the spot, of course.
