1 pound shredded white cheese (could be pepper jack, Manchango or whatever you like)
1 red bell pepper, chopped fine
Fresh spinach leaves, chopped (to your own level of taste)
2 or so small to medium chopped tomatoes
1 quart of low-fat milk

Directions:
Directions:
Get some water boiling in the bottom of a double boiler then turn the heat way down. In the top part, put the cheese in a whisk it every now and then until its melted. Then add the bell pepper, spinach (remember its gonna cook down to nothing when it gets hot) and the tomatoes. Slowly stir in the milk, add a little bit every few minutes and stir a bit; take your time and remember to keep the heat low.
This stuff is good on any kind of chip, bread or cracker. It’s also good on fingers – hell, it’s probably good on dirt clods. There will be no leftovers so go ahead and enjoy.
