12 ounces fingerling potatoes
¼ ounce fresh rosemary sprigs
Extra virgin olive oil

Directions:
Directions:
1. Preheat over to 425º. Halve potatoes lengthwise. Quarter any larger ones to cook evenly. Strip and finely chop rosemary from stems to give you 1 tablespoon.

2. Toss potatoes, rosemary and a drizzle of oil together and place on a baking sheet. Season with salt and pepper.

3. Roast potatoes in oven for 25 minutes until browned, occasionally giving a toss to cook evenly.
