6 eggs, separated and room temperature
2 1/4 cups superfine sugar, divided (just use granulated)
pinch of salt
1 teaspoon vanilla extract (plus a little)
1 cup powdered milk
Boiling water
rum, brandy, or whiskey
Nutmeg


If can't find pasteurized eggs, use very fresh eggs.

**Can double or triple!

In a small bowl, beat egg yolks until thick.

In large bowl of electric mixer, beat egg whites until stiff peaks form. Using a spatula, fold 1/2 cup sugar slowly into the prepared egg whites.

Using rubber spatula, fold the beaten egg yolks into the egg whites with the sugar.

Add the remaining 1 3/4 cupsugar and vanilla extract.

With rubber spatula, slowly and gradually fold in the powdered milk.

Store covered, in the refrigeratror. Will keep up to one week in fridge.

Place 1-3 TBSP batter into mug. Add boiling water and about 1 ounce of liquor. Stir until well blended. Sprinkle with nutmeg.
