1 lb. of carrots
1 oz. of unsalted butter
8 oz. of chicken stock
1 Tbsp. of minced parsley

Make a paper lid. Peel and cut carrots in Oblique shape.
Melt butter in a skillet and add the carrots. After letting the carrots sizzle a little add the stock. Lay paper lid on carrots and put in 350º oven for 15-20 minutes. Take skillet out of oven and remove the paper lid. Sprinkle with the minced parsley before serving. The carrots should be flavorful, tender and ready to serve.

Paper lid instructions: Use parchment paper to cut out a circle the size of the skillet. Fold paper circle in half and then fold in half again. Undo the folds and you have a paper lid for this recipe. Sometimes called a Cartouche.

Very flavorful way to serve your carrots. I acquired this recipe at culinary school. If you don't like carrots, fix them Vichy style and you will love them.
