5 lbs. baking potatoes
1/2 c. (1 stick) butter, room temperature or melted
1 c. sour cream
8 oz. cream cheese, room temperature
Salt & pepper to taste

Directions:
Scrub, peel & rinse the potatoes. Cut into 2" pieces. Place into a large stockpot with about 1"-2" of water. Bring to a slow boil & cook potatoes until fork tender. If done correctly, there will be no water to drain. Be careful not to burn the potatoes on the bottom of pot. Lower heat is the secret. When potatoes are cooked, add the remaining ingredients. Mash & mix well. To thoroughly mix ingredients, you may want to use a hand or stand mixer. Taste & adjust amount of salt & pepper, if necessary.
Transfer mashed potatoes to a shallow baking dish & cover with foil. Potatoes can be kept warm in the oven at this point, refrigerated or frozen.
Make ahead tip: These can be made several days ahead & kept in the refrigerator. Preheat the oven to
325º F & bake for 30-45 minutes, or until hot.
