1 1/2 lbs. chicken (no skin or bones)
4 tsp. lime juice
1/4 cup olive oil
3 cloves of garlic (minced)
4 tbsp. butter
1/2 onion (diced)
1 red bell pepper (diced)
1 poblano pepper (diced
1 can diced tomatoes
1 4 oz. can of diced green chiles (or to taste )
1 tsp. cumin
4 tsp. chile powder
1 cup chicken broth
2 tbsp. flour
1/2 tsp. cayenne pepper (optional)
1/2 cup half & half
1/3 cup sour cream
1/2 cup of cilantro (chopped)
3 cups grated pepper jack and cheddar
10 corn tortillas
salt & pepper to taste

Directions:
Directions:
brown chicken with a little olive oil add a little water and simmer .
in a hot large skillet add olive oil, minced garlic. diced onion, diced red bell pepper, diced poblano pepper , diced tomatoes, chicken broth, lime juice, diced can chiles, cumin, cook about 10 minutes then add flour, cayenne pepper (optional) , half & half, sour cream, butter, cilantro chopped, add chicken mixture , salt & pepper to taste cook till done .
in a baking pan spray evenly with pam .
roll mixture in tortillas and place in pan side by side cover with cheese and bake about 30 minutes .
