2/3 cup sugar
1/4 cup cornstarch
Pinch of salt
2 cups half & half
2 tblsp butter
1 tblsp vanilla
1 1/4 cup flaked coconut
6 large egg yolks (room temp and slightly beaten)
Pie Crust

Directions:
Directions:
In large saucepan whisk together sugar, cornstarch and salt. Slowly stir in the half & half until smooth. Bring to boil, stirring constantly. Reduce heat and simmer 2-3 minutes. Place egg yolks in small bowl and slowly whisk 1 cup of the hot mixture into the egg yolks. Pour the egg yolks into the saucepan with the hot mixture and cook over low heat, stirring constantly until mixture thickens and begins to steam. (4-5 minutes) Do not boil. Remove from heat and stir in the butter and vanilla. Strain thru fine mesh sieve. Cover with plastic wrap placed directly onto the mixture and cool. Fold in coconut when cool. Chill for 1 hour. Place cooled custard into cooked pie crust. Mound with whipped cream over filling and sprinkle with lightly toasted coconut - chill 2 hours before serving.
