Salmon
3 cups brown sugar
1/4 cup non-iodized salt
2 cups soy sauce
1 cup water
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp pepper
1/2 tsp tabasco sause
1 large can pineapple juice

Directions:
Directions:
Mix all ingredients (except the salmon) to make the brine. Add salmon and leave at least 8 hours - or overnite.

Remove salmon from brine and put in smoker. Can take up to 12 hours depending on size of fish chunks.
