2 lbs. of Granny Smith Apples (peeled and sliced) Salt and pepper to taste
1 Tbsp of butter
¼ cup of chicken broth
4 thick cut boneless Pork Loin Chops
1 cup of Half & Half
1/3 cup of Dijon Mustard

Directions:
Directions:
Preheat oven to 400 degrees. Butter an oblong baking dish and spread apples in dish. Bake for 15 minutes. Remove and set aside. While apples are baking, season chops with salt and pepper and brown in melted butter. Remove chops and place on top of apples. Add chicken broth to pan drippings and stir. Let boil 1 minute. In a small bowl, whisk together half & half and mustard. Add to skillet and blend. Bring to a boil and pour on top of chops. Cover and bake 20-25 minutes. Wonderful if served with long-grain and wild rice and glazed carrots
