3 cups mixed Nuts - unsalted
2 tbsp olive oil
1 tbsp tomato paste
1/4 cup grated Parmesan cheese
1 tsp sugar
2 tsp salt
1 tbsp dried basil
1 tsp dried oregano
1/2 tsp fennel seeds
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp smoked paprika
1/4 tsp crushed red pepper

Directions:
Directions:
Preheat oven to 275º.

Mix nuts, olive oil, tomato paste, Parmesan and sugar.

Place on parchment lined baking sheet. Bake for 15 minutes, tossing nuts three times.

Mix salt, basil, oregano, fennel seeds, garlic powder, onion powder, paprika and red pepper.

Remove nuts from oven and toss with spice rub.

Let cool and then serve.
