1 can nonstick vegetable oil cooking spray
4-5 large baking potatoes (cut into 1/4 strips)
2 Tablespoons olive oil
1-2 tablespoons seasoning blend of your choice: garlic powder, kosher salt, pepper, onion powder

Directions:

Preheat oven to 450 degrees. Spray a baking sheet with nonstick spray. Toss potatoes in a grocery bag with olive oil and seasoning choice. Arrange the potatoes on a baking sheet single layer. Bake 20-30 minutes, turning every 10 minutes so they brown evenly. Bake until browned and crispy.

The trick is not to overload the cookie sheet and make sure potatoes are single layer, preferably not touching each other. You can also substitute red potatoes or sweet potatoes cubed.
