Ingredients: 1/4 cup extra virgin olive oil 1 medium onion, coarsely chopped* 2 garlic cloves, peeled & coarsely chopped 1 celery stalk, coarsely chopped* 1 carrot, coarsely chopped* 1 pound ground chuck beef 1 (28 oz) can crushed tomatoes ( i prefer tomatoes with basil then omit fresh basil) 1/4 cup flat leaf italian parsely, chopped 8 fresh basil leaves, chopped (optional) salt & freshly ground pepper 1/4 cup grated Pecorino Romano or Parmesan cheese
1 bag or box of pasta, fettuccine, rigatoni, corkscrew or penne per pkg instructions *You can also purchase Mirepoix in a container in the vegetable area of the grocery or trader joes--this is already cut up carrot, onion and celery and saves chopping time!

Directions:In a large skillet, heat the olive oil. When almost smoking, add the onion & garlic. Saute over medium heat until the onions become very soft, about 8 minutes. Add the celery & carrot. Saute for 5 minutes. Raise heat to high, add the ground beef. Saute, stirring frequently & breaking up any large lumps and cook until meat is no longer pink, about 10 minutes. Add the tomatoes, parsley and basil cook over medium-low heat until the sauce thickens. Season with salt & pepper. Cook approx. 30 min. Top with cheese. |
