2 medium to large yellow onions, chopped finely
1 large can or 3 small cans of tomato paste
1 small can of diced tomatoes
1 large can of tomato puree
6-8 large eggs
2 gloves of garlic, minced
1-2 Tbsp. Oregano and Basil
3-4 tsps. of salt
1-2 tsps. of pepper
3 heaping Tbsp. of sugar
2 Tbsp. of extra virgin olive oil
water
1 lb. Pasta of your choice
Parmesan cheese

Directions:
Directions:
Onions should be no more than 1 inch deep in a 4 quart sauce pan. Saute oil, onions and garlic.garlic over a medium high heat until onions are translucent. Add tomato paste, tomato puree and diced tomatoes to sauce pan. Add 3 cans of water for every can of tomato paste. Mix well.
Add seasonings. Bring to a boil. Lower burner heat to low and simmer for one and half hours, stirring often. Do not let onions burn.

After simmering, break raw eggs in a circle pattern directly into sauce pan. Do not stir. Cover tightly and simmer on the lowest heat. Do not lift lid for one hour.

Prepare pasta according to package directions. Drain pasta and return to pan with sauce added.Ladle pasta to plates topped with "poached sauced" eggs. Serve with cheese.

This was called Friday sauce because it is meatless and often served by Catholics observing meatless Fridays.
