2 Tsp Olive Oil
1 Whole Salmon Filet (or 4 pieces)
¼ Tsp Salt
¼ Tsp Pepper
½ Tbsp. Garlic Powder, or to taste
1 Large Onion, sliced
¼ Cup Capers, Drained
2 Tbsps. Balsamic Vinegar
1 Tsp Sugar

Directions:
Directions:
Preheat oven to 350 degrees.
In a non-stick skillet, heat 1 Tsp olive oil over medium-high heat until hot. Add salmon, rounded side down; cook until lightly browned, about 2 minutes.
Transfer salmon to 13”x9” glass baking dish, skin-side down.
Sprinkle top of salmon with salt and pepper.
In the same skillet, add remaining 1 Tsp oil; cook onion over medium heat for 5 minutes or until tender.
Add sugar; cook 2 minutes, until onions are caramelized.
Stir balsamic vinegar and capers into onion mixture until the vinegar is incorporated.

Spoon onion caper mixture over salmon.
Cover pan with foil and place in oven.
Bake 12-15 minutes or until salmon flakes easily with a fork.

"Capers? Capers? What the hell are capers?!" said the clerk at the Piggly Wiggly Grocery Store in Athens, Georgia. Lori swears that is when Tom firmly decided he would not move to Georgia, and Lori had to move to the frozen tundra of Cleveland.

Seriously though, even people who don't think they salmon, usually love this version.
