1-1/4 Cups Sugar
!/2 Cup Margarine (or Butter (softened)
2 eggs
!-1/2 Cups mashed very ripe Bananas (3-4 medium)
1/2 Cup buttermilk
1 tsp vanilla
2-1/2 cups A.P. flour
1 tsp baking soda
1 tsp salt
1 cup of chopped nuts (if desired)

01 Heat oven to 350 F. Toast nuts. Grease bottoms of 2 (8"x4" ) loaf pans or 1 (9"x 5") loaf pan.

02 In a large bowl, mix together sugar and butter. Add eggs, bananas, buttermilk, and vanilla; with an electric mixer on medium speed until smooth. Stir in flour, baking soda, salt and nuts just until moistened. Pour batter into pans.

03 Bake 8" loaves 1 hour, 9" loaf 1-1/4 hours, or until a toothpick test comes out clean and dry. Cool in pans 10 minutes. Loosen sides of loaves from pans; remove from pans to cool on rack. Cool about 1 hour before slicing.. 8" loaves 16 slices.
