1 large onion, peeled
2 large carrots, peeled, sliced or chopped
2 stalks of celery, chopped (optional)
3 chicken breast, boneless and skinless
2 Tbsp. olive oil
6 cups low sodium chicken broth
1/2 tsp. dried rosemary
1 bay leaf
Salt and pepper to taste
2 cups wide dry egg noodles (about 4 oz.)
Parsley for garnish

Directions:
Directions:
Add all ingredients to crockpot with the exception of the noodles and parsley. Cook on low for 7 hours or 4 hours on high.

Remove onion and discard; take out chicken and cut into small pieces or shred with fork. Add chicken back into crockpot and add egg noodles. Cook for another 1 hour on high or until noodles are cooked.

Garnish with parsley.
