4 chicken breasts, cooked and cut into chunks
1 large white onion
3 cloves garlic
1 (4-oz) can of green chiles
¼ c. fresh cilantro leaves, chopped (optional)
2 tsp. ground cumin
½ tsp. cayenne pepper
1 T. olive oil
3 (15-oz) cans great Northern white beans, drained
5 c. chicken broth
1 can corn, drained
1 c. shredded cheese (colby jack is good)

Put the onion, garlic, chiles, cilantro, cumin and cayenne pepper in the food processor. Pulse to finely chop. Pour the mix into your soup pot and sauté in olive oil for a few minutes. Puree one can of white beans in the food processor until smooth. Add the pureed beans to the soup pot. This will thicken the soup. Slowly add the chicken broth. Then, add the chicken chunks, corn, and other 2 cans of beans. Simmer for 20 minutes. After chili is ready, add the cup of shredded cheese and stir until melted. Serve and garnish with extra cheese, sour cream, and/or green onions.
