1 lb cod fish fillet
3 T butter, melted
2 tablespoons lemon juice (1/2 of a large fresh lemon)
1⁄4 cup all-purpose flour
1⁄4 cup Panko bread crumbs
1⁄4 teaspoon salt
1⁄8 teaspoon pepper

If fish fillets are large, cut into serving pieces.

In another bowl, mix flour, bread crumbs, salt and pepper.

Coat fish with flour mixture by pressing flour mix into both sides of fish so that as much as possible sticks to both sides. Put fish in large baking dish. Sprinkle any remaining flour mixture into top of fillets and gently press into the fish. Place fish in refrigerator for one hour to set the bread crumb topping.

Place fish in ungreased square baking dish, 8x8x2 inches. Mix melted butter and fresh lemon juice in a small dish and drizzle over top of fish. Sprinkle top of fillets with paprika.

Cook uncovered in 350 degree oven until fish flakes easily with fork, 25-30 minutes. Place under broiler for last few minutes if needed to brown the top of fish to a golden brown color. Garnish with parsley sprigs and lemon slices if desired.
