1 Cup Old Fashion or Quick Grits
4 TB unsalted butter
1/4 tsp cayenne pepper
1 Cup finely shredded sharp cheddar cheese
1/2 cup chopped green onion (spring)
4 large eggs, seperated

Directions:
Directions:
1. In saucepan over high heat, bring 4 cups water and 1/2 tsp salt to boil. Stir in grits and return to boil. Reduce heat to very low and simmer, stirring frequently, until thick and creamy, 15-20 mins for old fashion, 5-6 mins for quick grits. Remove the pan from heat. Add butter, cayenne, and cheese and stir until cheese is melted and smooth. Stir in green onions and let cool until lukewarm. Add egg yolks and stir until blended.

2. While grits are cooking, preheat oven to 350. Generously butter a 9 x 13 inch baking dish.

3. In a large bowl, using an electric mixer on high speed, beat egg whites until they form glossy soft peaks (bend over) Fold about 1/4th of beaten egg whites into the grits to lighten the mixture, then gently fold in the remaining whites. Pour the mixture into the prepared baking dish.

4. Bake until puffed and golden brown, about 45 mins. Serve at once, directly from the dish
