2 lbs. stew meat, (trimmed)
4 or 5 medium potatoes, cut into 1" chunks
5 or 6 carrots, cut into 1/2" chunks
3 or 4 celery stalks, cut to 1/2 or 1"
1 medium onion, chopped to desired size
1 small can of mushrooms
2 cups tomato juice
1 cup water
3 T. quick-cooking tapioca
1 t. sugar
2 t. salt
1/2 t. black pepper

Preheat oven to 350º
Coat a 9 by 13" baking dish with nonstick cooking spray.

In a large bowl, combine the beef, potatoes, carrots, celery, onion and mushrooms.
Mix well; pour evenly into baking dish.

In a large bowl, combine remaining ingredients.
Mix well, and pour evenly over beef and veggies.

Cover tightly with aluminum foil and bake for 2 to 2 1/2 hours, or until the beef and vegetables are tender.
