1 lg can whole tomatoes cut up
1 tablespoon extra-virgin olive oil
4 large cloves garlic, minced
1 bunch fresh herbs (lots of basil as well as parsley, oregano, and/or thyme) or 1 T. dry Italian herbs
Salt & freshly ground black pepper
Fennel seed to taste
1/2 cup robust red wine
1/2 cup grated Parmesan cheese.
Hot Italian sausage links casing removed
Spaghetti

Directions:
Directions:
Slice sausage in 1 inch pieces and fry in pan until cooked through. Remove sausage and add onions and olive oil to pan; cook until onions are translucent. Add in minced garlic and saute until softened and fragrant.
Add tomatoes with juices and wine to pot. Place fresh herb bunch on top, bring heat to a simmer. Reduce heat to low, cover pot, and simmer for 30 minutes, stirring occasionally.

When sauce has thickened and reduced, remove herb stems. Stir in sausage links salt, pepper, and other seasonings. Taste and adjust seasonings.

Add Parmesan cheese stir until melted. Serve spaghetti meat sauce over al dente pasta.
