1/4 c. Sugar
2 T. Butter
1/2 t. Salt
3/4 c. Scalded Milk
1/4 Yeast Cake (or 1/2 t. Dry Yeast) dissolved in 1/4 c. Warm Water
1 c. Cold, Cooked Oatmeal
2 1/2 c. Flour

Directions:
Directions:
In a large bowl, mix sugar, butter and salt with scalded milk. Cool to lukewarm and then add dissolved yeast mixture. In a separate bowl, mix oatmeal and flour together using the tips of your fingers. Add to milk mixture, beat well and let rise over night. In the morning, deflate mixture and fill greased iron muffin tins about 2/3 full. Place on back of stove to gradually heat pans and let the muffins rise. When mixture fills the pan place in a moderate oven (350-375 F) and bake for 20 or 30 minutes.
