1/3 c. Carrots, Diced
1/3 c. Turnips, Diced
1/3 c. Celery, Diced
1 1/2 c. Potatoes, Diced
1/2 Onion, Sliced thinly
4 c. Water
4 T. Butter
Salt, Pepper, Butter, Parsley

Directions:
Directions:
Melt 4 T. Butter in a stew pot and add vegetables except potatoes. Cook about ten minutes stirring constantly. Add potatoes and cook two minutes. Add water and bring to a boil then let simmer for one hour. Beat with a fork or spoon to break up vegetables. Season with salt. pepper, butter, and parsley.
