2 inch cube of Fat Salt Pork
1 Medium Onion, thinly sliced
3 1/2 c. Potatoes, chopped
1 can Corn (unspecified size)
4 c. Milk
4 T. Butter
salt and pepper
10 Saltine Crackers

Directions:
Directions:
Cut fat salt pork into small cubes and add to frying pan. Add onion and cook for five minutes stirring frequently so it does not burn. Strain the fat into a stew pan, set aside. Place potatoes in another sauce pan and cover with water. Boil for five minutes then drain. Add potato chunks to reserved fat in pan and add 2 cups of boiling water. Cook until potatoes are soft. Add corn and milk and bring to boiling point. Season with butter, salt and pepper. In a separate bowl mix crackers with enough cold milk to moisten them. Add to chowder and serve as soon as the crackers are heated through.
