1 quart Milk
1 T. Flour
1 T. Butter
1 T Onion, Chopped
salt
pepper
celery or celery seed if desired
1 pint of stewed and strained celery
1 egg

Directions:
Directions:
Melt butter in large skillet, add flour and cook until pale brown. Add onion and milk stirring until smooth and thickened. Add celery and bring to boil. In a small bowl, beat egg until creamy. Add a small amount of the soup to the egg to temper it and then slowly add egg mixture to soup pot. stirring well.
