6 whole heads of new-crop garlic (firm and unsprouting)
1/3 cup olive oil
Salt
Black pepper
2 or 3 sprigs thyme, rosemary or sage

Directions:
Preheat oven to 300º. Make an incision around the heads of garlic to remove the outer skin from the top half of the heads, exposing the top of the individual cloves. Arrange in a baking dish that will just hold them. Pour the olive oil over the top. Add salt and pepper and herbs. Bake, covered, for one hour. Take off the cover and feel the garlic. If squishy soft, remove from oven. If it still keeps shape when pinched, spoon oil over the top and continue baking for another 20 to 30 minutes. The garlic will be very tender and sweet.

To use, squeeze garlic from the peels. Use as it is on pizza, or add to tomato sauces, de-glazed pan sauces or pureed vegetables. Best of all, squeeze onto fresh baked French bread.
