1 eggplant (about 1-1/2 pounds)
4 tablespoons tahini (sesame paste)
1 medium clove garlic, peeled and crushed
1/2 teaspoon salt
Juice of 1 lemon
1 tablespoon olive oil

Optional Garnishes:
Fresh parsley
Toasted pine nuts

Directions:
Preheat oven to broil. Puncture the eggplant. Place on a baking sheet that has been covered with foil. Broil for 20 to 25 minutes, turning occasionally until eggplant is soft. Remove from oven.

Immediately peel the skin and scoop out the pulp. Add the remaining ingredients and blend well. (Do not use a food processor or blender.) Garnish with oil, parsley and toasted pine nuts. Serve at room temperature with crackers or Syrian bread.
