PIZZELLES

6 Eggs
1/4 c. Oil
1/4 Butter
1 1/2 c. sugar
1/4 c. Shortening
2 t. Baking Powder
1/4 t. Salt
1-2 T. Flavoring (anise, vanilla, almond, etc)
2-2 1/2 c. Flour

Directions:
Directions:
Blend ingredients together, adding one at a time. Drop approximately a heaping one half teaspoon of batter onto center o each cookie section. Close the lid and allow to cook for 45 seconds to 1 minute and 15 seconds or until lightly brown. Allow to cool on a wire rack or paper towels. Dust with powdered sugar. Cookies may be served flat or rolled tightly onto a cylinder. Cookies must be hot during rolling and held in shape until cool.

Note: Let the butter come to room temperature but not totally melted when mixing the batter. Ingredients are incorporated together in the same order as noted above.

My husband, Jerry is Italian. One of his favorite memories is that of his Mom always making pizzelles at Christmas time. While her recipe is included in this cookbook, this recipe is a little different and was
included with the pizzelle machine that an acquaintance of my best friend, Diannia Lissiak, shared with us. These pizzelles are crispy and is one of our favorite recipes for these Italian delights.
