1/2 cup granulated sugar
1 cup brown sugar
1 cup vegetable oil
2 egg
1/2 cup molasses

4 cups flour
2 Tbsp cocoa powder
4 tsp baking soda
4 tsp ground ginger
2 tsp ground cinnamon
1/2 tsp salt

1 cup of granulated sugar for coating
1 cup of icing sugar for coating

Preheat oven to 350 degrees.

In the mixer add the sugars, oil, eggs and molasses and mix until well-combined. Add the flour mixture slowly and mix until all the flour is absorbed. The dough needs to be a bit sticky, otherwise the sugars won't stick.
Using the smallest 1" cookie scoop, roll into balls, then dredge into the the granulated sugar, then roll in the icing sugar.

Place balls on a parchment-lined baking sheet (no need to flatten them, they will spread out on their own), and bake at 350 degrees for 10 minutes exactly. You want them chewy, so don't overbake!

Allow the cookies to cool on their baking tray for 5 minutes, then transfer to a wire rack to cool completely. Enjoy!!

This recipe has been adapted from the "Hey, Lady Grey" website and is an absolute keeper!! When you want gingerbread, but don't want to make cutouts, this recipe is for you! SO stunning to look at too! :) I cut back on the granulated sugar, as I thought they were just a bit too sweet..
