2/3 cup sugar
1/2 cup vegetable oil
2 tsp almond or vanilla extract
2 eggs
2 1/2 cups all purpose flour
3/4 cup chopped candied cherries
You can substitute dried cherries
1/2 cup chopped slivered almonds
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt

Directions:
Directions:
Heat oven to 350º. Beat sugar, oil, extract and eggs in large bowl with spoon. Stir in remaining ingredients.

Turn dough onto lightly floured surface. Knead until smooth. Shape half of dough at a time into rectangle 10x3 inches, on an ungraded cookie sheet.
Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. When slightly cooled cut into 1/2 inch slices. Cool total of 15 minutes. Places slices cut side down on cookie sheet.
Bake 15 minutes, turning once until crisp and light brown. Immediately remove from cookie sheet to wire rack: cool completely. Drizzle with powdered sugar glaze.

Powdered Sugar Glaze
1/2 cup powdered sugar
2 tsp water
1 tsp almond extract
Mix all ingredients until smooth and thin enough to drizzle.

I have made this for many years. Mom likes to tell the story of when we went to a coffee shop and had biscotti the first time. She told me “I don’t like those hard old cookies”. She has changed her mind since then!
