1 cup shortening
2¼ cups sugar
3 eggs
8 T buttermilk
1½ tsp soda
1½ cups mashed bananas
3 cups flour
1½ cups coconut

Directions:
Directions:
Cream shortening with sugar. Add eggs one at a time, beating after each addition. Add milk and soda to bananas alternately with flour to creamed mixture. Add coconut. Pour into well greased and floured angel food or tube pan. Bake for 50 minutes at 350º. Frosting not required.
