2 cups dry black beans
1 habanero pepper
1 red onion, chopped
4 cloves garlic, minced
ginger
2 T butter
5-8 cups chicken stock
salt

Directions:
Soak beans overnight covered by three inches of water. Drain water, pour beans into a saucepan and cover with three inches of fresh water. Bring to boil, reduce to simmer for 1.5 hours. Do not turn heat down too much or beans won't cook. When beans are tender, puree through food mill or processor. Set water aside. Melt butter in a large stock pot. Saute onion, pepper, garlic, ginger in a pot until onion is translucent. Add bean puree, retained water, and enough chicken stock for a soupy consistency. Bring to boil, then simmer for 30-90 minutes, salting to taste. Serve with sour cream and cilantro.


I add chopped cilantro into the soup about 30 minutes before done.
