1 c chopped pecans
2 c. washed white rice
1 c. Mexi-corn
2 cans chicken or beef broth - I use 20 oz water w/2 chicken bullion cubes
1/2 c. chopped celery
1/2 c. green pepper
1/2 c. parsley flakes
1 large onion chopped fine
1/2 stick butter or margarine

Put vegetables in butter and cook until wilted. Add rice and brown. Add Mexicorn, nuts, salt and pepper. Mix in broth; cover with lid and cook till broth is absorbed and rice is soft

This is another recipe from Vernie Stremple.

NOTE: This can be modified by omitting the pecans and Mexicorn, and adding 1/2 cup shredded carrots for a veggie rice.
