1-1/2 cups chicken broth
3/4 cup milk
3/4 cup stone ground grits
3 tablespoons unsalted butter
1/4 cup grated parmesan cheese
Salt to taste
1 tablespoon olive oil
12 ounces wild mushrooms (shiitake, portabella or cremini), sliced
1 garlic clove, minced
2 tablespoons white wine
6 ounces thinly sliced honey-baked ham, cut into thin strips
1 tablespoon unsalted butter, melted
1/4 cup maple syrup
1/4 teaspoon red chili flakes

Preheat oven to 325º. Butter 8" x 12" baking dish. Bring chicken broth and milk to a boil in a medium saucepan. Slowly pour in grits, stirring constantly Cover and simmer, stirring occasionally for 18 to 20 minutes, or until broth and milk have been absorbed. Stir in butter and Parmesan. Season to taste with salt and pour into buttered dish.

Heat medium sauté pan and pour in olive oil. Add mushrooms and garlic, sautéing until mushrooms are wilted. Pour in white wine, add thyme and simmer until liquid is evaporated. Spread mushrooms over grits. Later ham evenly over mushrooms. Combine melted butter, maple syrup and red chili flakes in a small bowl; pour over ham. Bake for 20 to 25 minutes, or until ham is crispy.
