1 cup butter, softened
1/2 cup granulated sugar
2 teaspoons vanilla
2 teaspoons instant coffee
1/4 cup cocoa powder, unsweetened
1-3/4 cup all purpose flour
1/2 teaspoon salt
2 cups raw pecans, finely chopped
Powdered sugar - for dusting

Directions:
Directions:
Preheat oven to 325º. In a small dish, dissolve instant coffee into vanilla. In a large bowl, cream butter, sugar and vanilla/coffee mixture. Add dry ingredients and mix until blended. Stir in finely chopped pecans (I use my hands). Shape into one inch balls. Bake for 15 minutes. Roll in powdered sugar.
