2 cups sugar
3 tbl corn starch
3 tbl cocoa
2 cups milk
3 egg yolks, beaten
3 tbl butter
1/2 tsp vanilla

Pate Brisee Crust:
2 1/2 cup all purpose flour
2 sticks salted butter, cold cut into 1/2" pieces
1/4 to 1/2 cup ice water

For the flakiest crust, make sure all ingredients (including the flour) are cold before you begin

Preheat oven to 350.

Pulse flour and butter until a mixture of coarse crumbs with some larger pieces remain.

With machine running, add ice water in a slow, steady stream just until dough holds together without being too wet or sticky, no longer than 30 seconds.

Divide dough into half and shape into disks. Wrap in plastic and refrigerate at least one hour or overnight. Dough can be frozen for up to one month.

Press the dough into mini muffin pan. Bake at 350 for 15 minutes.

Filling:
Sift corn starch, and sugar
Add cocoa
In a medium saucepan, mix together the milk, beaten egg yolks, butter and vanilla.
Add the sifted mixture of corn starch and sugar.
Bring to a boil and continue boiling for about 20-30 minutes until thickened.
Stir continuously to avoid sticking.....don't lick the spoon and put it back in the filling...YUCK!

Add the filling to the cooked shells.
