3-4 Medium Sweet Potatoes
½ tsp. Cayenne Pepper
2 tsp. Salt
1 tsp. Pepper
1 T. Parsley
1 tsp. Onion Powder
1 tsp. Garlic Powder
¼ tsp. Ginger
1 tsp. Adobo
2 T. Olive Oil

1 Medium Yellow Onion
1 Clove Garlic, minced
1 T. Olive Oil
1 T. Butter

4-8 Eggs, fried
Shredded Cheddar Cheese
Sour Cream
Guacamole

Directions:
1. Preheat the oven to 400ºF.

2. Peel and cut sweet potatoes into chunks. Place in large bowl.

3. Add spices and olive oil to potatoes. Mix. Place on baking sheet and bake in oven for 15 minutes or until tender.

4. Add onion and garlic to pan and sauté in olive oil and butter. Mix with potatoes.

5. In the same pan, fry 1-2 eggs per person.

6. Spoon hash onto plate. Sprinkle with cheddar cheese. Top with fried egg. Add sour cream and guacamole on the side.
