3 cups pared, thinly sliced potatoes
1 tsp salt
2 Tbsp flour
3 Tbsp butter
1/4 cup chopped chives
1 cup milk
1/4 cup half and half cream
1 1/4 tsp salt
1/4 tsp dry mustard

Directions:
Directions:
Preheat oven to 350 degrees. Mix the flout with 2 Tbsp of butter to make a paste In a greased 9 by 13 inch pan place potatoes in three layers sprinkling each layer with 1/3 of the paste mixture and 1/3 of the chives. Heat the milk and cream and season with the salt and dry mustard ( you can add paprika also if desired) Pour the mixture over the potatoes and cover the pan with aluminum foil. Bake for 40 minutes and take the foil off and continue to bake until potatoes are tender and starting to brown on top.about 15 to 20 minutes.

This is a basic recipe that I use from Joy of Cooking. I have been known to add bacon (cooked and crumbled) or ham to this for a little more flavor.
