2 c. Flour
1 tsp. Salt
2 c. Sugar
1½ c. Crisco Oil
4 Eggs
2 tsp. Cinnamon
2 tsp. Soda
3 c. Finely grated carrots

ICING;
1 8 oz. pkg. Cream Cheese, softened
1 stick butter or margarine, softened
1 box powdered sugar
1 tsp. vanilla
½ c. Nuts or raisins

Directions:

Mix sugar, oil, and eggs in large mixing bowl. Blend in the carrots. Sift the dry ingredients together and add slowly to the mixture. Pour into prepared cake pan(s). Bake at 350 for 30-35 minutes.

This is another of those recipes that I got from somebody else. I bought a small cookbook in 1988 from the USAA Retirees that contained many good recipes, but this, I thought, was the absolute best. I baked this cake many, many times and received accolades each time. I wish it had been an original, but I accepted the kudos anyway. One thing I always did was add pecans to the cake as well as the icing. I love pecans!!
