1 pkg active dry yeast ( 1 Tbsp)
1 cup warm water
2 Tbsp olive oil
1 tsp sugar
1/4 tsp salt
1 tsp minced garlic in oil
1 tsp Italian seasoning
2 1/2 to 2 3/4 cups all purpose flour or can use some whole wheat in place of white flour
1 pound mild sausage, crumbled and cooked
8 oz. mozzarella cheese grated
grated Parmesan or Asiago cheese to sprinkle over the top about 1 oz.

Make the dough in a large bowl first sprinkling the yeast over the water. Then add the oil, sugar, salt and seasoning and garlic. Add 1 1/2 cup flour and beat until smooth. Stir in enough remaining flour to make a firm dough, place in a greased bowl and turn to coat the top. Allow to rise for 1 hour. Punch down and turn out dough unto a floured surface and let rest for 10 minutes. Roll into a 12 x 15 inch rectangle sprinkle sausage and then cheese over the rectangle leaving a 1 inch margin at the top. sprinkle grated Asiago or Parmesan cheese over and then roll up jelly roll style pinching the edges to seal. Make sure the top is sealed well also. Place on a lightly greased cookie sheet with sides and bake at 350 degrees for about 40 minutes until the top is golden and the cheese is starting to melt out of the edges. Allow to cool for 5 to 10 minutes and slice and serve.

If you want really fresh Italian seasoning here is the ratio;
2 1/2 Tbsp dried oregano
2 1/2 Tbsp dried thyme
1 Tbsp dried basil
1 Tbsp dried rosemary
1 Tbsp dried sage
Combine in bowl and use.
