1 lb breakfast sausage - I use Jimmy Dean
1/2 tsp ground black pepper
6 tbsp flour
3 cups whole milk - not that low fat stuff
Salt
Biscuits - cut in half
Cast iron skillet

Directions:
Directions:
Cook sausage in a large cast iron skillet for 8-10 minutes or until thoroughly cooked, stirring frequently.

Drain and reserve drippings; place the sausage in a bowl.

Return half of the drippings to the skillet. Add fresh ground pepper and cook for about 3 minutes

Add flour and remaining drippings to the skillet; stir with a wire whisk until well blended. Cook for 6-8 minutes or until browned, stirring constantly.

Gradually stir in your milk. Cook and stir for 3-5 minutes or until mixture thickens and comes to a boil.

Add the sausage and cook for 1-2 minutes or until thoroughly heated, stirring frequently.

Add more milk if mixture gets too thick. Add salt and pepper to taste.

Serve over biscuits.
