"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Directions:
Preheat your oven to 350ºF. Line a baking sheet with foil or parchment paper.
Combine all the ingredients in a medium bowl, and mix with clean hands to combine. Don’t overwork the meat because it’ll end up making for tougher meatballs.
Using a small scoop or a spoon, carve out a 2 tablespoon portion of the mixture. Gently roll into a ball and place on the baking sheet. Repeat this with the rest of the meat.
Bake for about 15 minutes or until the meat is cooked through.
